Farm-fresh Vermont Cheddar tames the smoked Morita jalapeno chilies and the result is a tantalizing, smoky flavor with a slightly spicy kick.  "Trim" refers to our own hand-cut cheese -- we cut these irregular 30 lb blocks of cheese which is why each piece has a unique shape.  (Availability not guaranteed, it's up to the cows)
