Veritable Chamues

Stilton Blue
Description:
Historically referred to as "The King of Cheeses" Stilton is a blue-mould cheese with a rich and mellow flavor and a piquant aftertaste. It has narrow, blue-green veins and a wrinkled rind which is not edible. Stilton is milder than Roquefort or Gorgonzola, and is equally excellent for crumbling over salads or as a dessert cheese, served with a Port Wine.

St. Andre
Description:
Traditionally crafted in Coutances, in the Normandy region of northwestern France, the cheese is also made internationally from both raw and pasteurized milk. It has a soft buttery texture, tangy edible rind, and tastes like an intense version of Brie. Extra heavy cream is added to the cheese during manufacture, and the curing process last approximately 30 days. A wheel of Saint-André is smaller and shaped higher than the familiar flat wheel of Brie.

Saga Classic Blue

Original Saga is a cross between blue cheese and brie, displaying a creamy, blue-cheese characteristics with a white-mould rind. It is very mild for a blue cheese. Saga is an excellent dessert cheese that should be served with fruit and wine. It is also an excellent cheese in salads or as a snack on a cracker. Saga is now made in America, as well as in Denmark.

Roquefort Societe
Description:
It is the quality of the milk, the processing of the curd, the adding of “Penicillium roqueforti” and finally the ripening in natural caves that give us this unique and remarkable cheese. In fact, only the milk of specially bred sheep is used and is ripened in limestone caverns. This cheese has a distinct bouquet and a flavor that combines the sweet burnt-caramel taste of sheep's milk with the sharp, metallic tang of the blue mould.

Description:
When fresh Ricotta goes through its natural aging process, a hard, pungent cheese, suitable for eating or grating results. Like fresh Ricotta, Ricotta Salata is almost white in color and semi-soft in texture.

Regentino Argentine
Description:
Regentino Argentine is similar to Italian Parmigiano Reggiano; in fact, because the loaf is smaller, its name is the diminutive in Spanish for the Italian, hard cheese Reggiano. It is made from milk, produced by cows which are pasture fed. Cured longer than competitive, it has an excellent taste and is perfect for cooking, grating, or a topping on pasta.

Queso Cabrales
Description:
A rough-rinded Spanish blue cheese from Northern Spain (region of Asturias), Cabrales is made from blended cow's, goat's and sheep's milk. It is matured in naturally-formed caves offering a creamy texture, a complex flavor and a powerful bouquet. Cabrales is salted, wrapped in foil and matures for 6 months in natural limestone caverns. The locals are known to admire this cheese when it's almost totally blue.

Tomme Noir des Pyrénées has been produced in the French Pyrénées Mountains since the 12th Century. It wrapped in black wax (hence the "noir") and the interior is creamy white with little holes. Description:
Pamigiano-Reggiano is a traditional, unpasteurized, hard cheese made from cow's, skimmed milk. A full wheel of Parmigiano Reggiano weighs 75 lbs. Parmigiano Reggiano's flavor is unmistakably piquant. Primarily a grating cheese, Parmigiano Reggiano is a great topping for soups, pasta dishes, veal chicken or salads. Orb Weaver Farm - Cave Aged
Description:
Using stones from neighboring Panton, VT, Orb Weaver built a cave in a small hillside on their farm to replicate as closely as possible the aging process used for centuries before refrigeration. Cave conditions are warmer and more humid than those for their standard farmhouse cheese, and the aging cycle is longer - up to a year for a 10-pound wheel. They don't wax cave-aged cheese, but instead turn and brush the wheels every other day for several months, creating a natural rind. This old-fashioned process results in a magnificant treat for cheese lovers: a robust, complex array of nutty, earthy flavors and a firm, slightly drier texture that makes our cave-aged cheese a true delicacy.

Morbier
Description:
A semi-soft, unpasteurized, creamery, cow's milk cheese from Franche-Comte. It has a creamy brown crust, the interior is two layers separated by a thin flavorless layer of ash, which separates the morning milking from the evening milking. It is a creamy cheese with a flavor of nuts and fruit and an aroma of fresh hay. The cheese is elastic and springy, with a pungent, sweet and fruity taste.

Maytag Blue Cheese

Maytag Blue has been produced since 1920's when the Maytag's founded their family farm producing cheeses. This cheese is not produced in huge volumes as the cheesemakers want to keep the tradition of hand-made cheese and offer only best quality cheese to the customer. Maytag Blue has a crumbly texture and it reveals a very spicy flavor. The period of curing and maturing takes six months. This cheese is used as a table cheese for dressings and salads.

Livradoux Raclette
Description:
Most famous for the traditional Swiss Racletete specialty made by melting thin slices over boiled potatos, the name is derived from the French verb racler (to scrape). Raclette is a cow's milk cheese that has a light-brown rind and a firm texture. Although the cheese has a pleasant enough flavor, it is not special until it is heated in front of a fire or under a hot grill. Then the full nutty, sweet and slightly fruity aroma intensifies and the elasticity of the melting cheese makes it truly magnificent.

King Island Diary - Roaring 40's
Description:
Unlike typical French blue cheeses (e.g. Roquefort) made from ewe's milk, Roaring 40's Blue is made entirely from cow's milk which gives it a milder taste. Roaring Forties is a full bodied blue with a honeyed, slightly nutty quality and great aftertaste. It is a rindless cheese, matured in wax, which helps it retain moisture and creates a smooth and creamy texture. A Roquefort style mould is used to create this singular and exciting cheese style.

Kaseri - Greek
Description:
Kasseri is a versatile, multi-purpose cheese made from 80 per cent sheep's milk with the remainder goat's milk. There is no rind but the white crust is smooth, creamy and springy. Quite salty and pungent, with a dry feel in the mouth, it has an underlying sweetness due to the sheep's milk. Kaseri is used in Greece instead of mozzarella and appears in local dishes.

Jasper Hill Blue
Description:
Bayley Hazen Blue is a natural rinded blue cheese. It is made with whole raw milk every other day, primarily with morning milk, which is lower in fat. The consistency of a Bayley Hazen is drier than most blues which brings forth a hint of nuts and grasses and in the odd batch, licorice. Though drier and crumblier than most blues, its texture reminds one of chocolate and butter.

Jarlsberg is a traditional, creamery, hard, Norwegian cheese. The world's most famous "Baby Swiss", Jarlsberg has the consistency texture and hole formation of Swiss Emmental but its flavor is more nut-like and sweeter. A full wheel of Jarlsberg weighs about 20 lbs., one tenth the weight of a wheel of Emmental. Jarlsberg can be used as a table cheese, dessert cheese or sandwich cheese. Gruyere

A Swiss household favorite, Gruyere is named after the village Gruyere in French-speaking Switzerland. The natural, rusty brown rind is hard, dry and often pitted with tiny holes. Slightly grainy, the cheese has a wonderful complexity of flavors - at first fruity, later becomes more earthy and nutty. Gorgonzola Cinque Stella

Gorgonzola is a traditional, creamery and co-operative, blue cheese. The greenish-blue penicillin mould imparts a sharp, spicy flavor and provides an excellent contrast to the rich, creamy cheese. Gorgonzola is made in the northern Italian village, according to which the cheese has its name. At about four weeks, the cheeses are pierced with thick needles to encourage the spread of the mould. Gorgonzola ripens in three to six months. Gorgonzola is excellent in salads and dips.

This cheese is cured over a three-week period attracting naturally occurring flora to form a rind. Made in the Gorgonzola style, GorDawnZola produces a tangy, sharp and crumbly blue cheese. Genuine Fontina comes from the Val d'Aosta region of Italy in the Alps near the French and Swiss borders. Fontina is dense, smooth and slightly elastic. The straw-colored interior with its small round holes has a delicate nuttiness with a hint of mild honey. When melted, as it frequently is, the flavor is earthy with a taste of mushrooms and a hint of fresh acidity.

Favrskov Danish Blue
Description:
This cheese was invented in the early twentieth century by Denmark's Marius Boel. Danish blue has a sharp taste, salty bite and feels very creamy in the mouth. The white interior contrasts with blue-black mould, which is rather gritty and salty. Danish blue is used as a table cheese and is very good in salads. This cheese is also known as Marmora.

Description:
Cotswold is a variation of double glouster to which chopped onions and chives have been added. It is golden yellow to orange in color. This is a full-flavored, creamy, mild cheese, similar to cheddar. The onions and chives provide a distinctive, flavorful enhancement.

Comte
Description:
Comté is a traditional, hard cheese with similar characteristics to Switzerland's Gruyère. Produced from the milk of cows that have been fed from the rich pastures of the Jura mountains, no additives are mixed with the milk. Comté is very creamy and has a piquant, yet sweet flavor. The quality can be judged by the size and shape and condition of holes ('eyes'). Comté requires a long maturing period. During this period of affinage its rind becomes a golden yellow to brown and hardens.

Cantal
Description:
The oldest of all French cheeses, this cheese is the grandfather of the cheeses from the Auvergne region, dating back to the time of the Gauls. Auvergne is a region known for a thousand volcanoes, blessed by mountain storms and summer sun, the pasture lands are extremely fertile -- Cantal cheese captures all the richness of these pasture lands. A well-ripened Cantal has a vigorous taste, whereas a young cheese has the sweetness of raw milk. The taste has a tangy butter taste. A fine example of a country cheese.

Cambazola is a modern, creamy, blue cheese made from cow's milk. It has a flat round shape with penicillin rind. The cheese was conceived in 1970's and carries a smooth texture with a spicky and slight swee-and-sour taste.

Cabot Clothbound Cheddar

Made by Cabot Creamery and aged at the Cellars of Jasper Hill, this clothbound English-style cheddar won Best of Class at the 2010 World Championship Cheese Contest. Brie de Nangis was originally an artisan cheese made around the town of the same name. Though no longer produced there, it remains true to the original style. When young it is milky and sweet with just a hint of earthiness that over time will becomes more pronounced and pungent.

Bleu d'Auvergne is a traditional, moist and cream blue cheese. It's taste is tart and gluey, with a hint of herbs and melted butter. With age, the crust becomes sticky and the interior gradually collapses which allows the taste to become more intense and spicy. This cheese is delicious in salads with nuts or raw mushrooms. It can be also used as a seasoning for pasta.

Appenzeller
Description:
Appenzeller cheese is a hard cow's-milk cheese produced in the Appenzell region of northeast Switzerland. A herbal brine, sometimes incorporating wine or cider, is applied to the wheels of cheese while they cure, which flavors and preserves the cheese while promoting the formation of a rind. The cheese is straw-colored and has a strong smell and a nutty or fruity flavor, which can range from mild to tangy, depending on how long it is aged.
